Are the rockers rusted completely through, so that if you removed the floor pan there would not be a solid piece of metal from the front of the cab to the back?
If so I would do the rockers first, to strengthen the cab when the floor pans are removed.
I would also recommend removing the doors. That way you won't have their weight acting as a lever trying to pull the cab out of alignment.

In that case I think it's more a matter of preference.
When you replace the floor pans it's a good opportunity to replace your front cab mounts if they are rusted out.
This is how I did mine.

I have not done sheetmetal work before, but the people I spoken with stressted leaving the doors on. They said when you replace the doors that the gaps may not line up as before. If the cab flexing is an issue just temperarly welded bar stock in in an X pattern to keep the cab from shifting. Again this is what I was told, not what I have done.

When I did my trucks cab mounts and flor pans, the front clip was off the truck. I did like the thought of all that weight hanging and pulling on the cab when there was no fllor pan or cab mounts to resist the pull.
When we put the doors back on it took les than 5 minutes to get them lined up all the way around.
